
Summer Pasta Salad
Summer calls for cold pasta salad and we made the perfect recipe for you. This recipe features homegrown local tomatoes that give the salad a freshness that beats the hot summer heat.

Ingredients
- Salad
- 1 lb pasta (farfalle, fusilli)
- 1 cup cherry tomatoes halved
- ½ medium red onion, sliced
- 1 cup garbanzo beans
- 1 large cucumber peeled and seeded
- Bruno’s Wax Peppers, sliced
- ½ cup kalamata olives, halved
- ½ cup Spanish olives, halved
- 8 oz salami, chopped
- 1 container feta
Dressing
- 2 cloves of garlic, minced or pressed
- 1 tbsp fresh parsley
- 1 tbsp fresh oregano
- 1 tbsp fresh basil
- ¼ tsp red pepper flakes
- 2 tbsp red wine vinegar
- 2 tbsp lemon juice
- ½ cup olive oil
- Salt & pepper to taste
Directions
Step 1
Cook pasta according to the directions of the pasta of your choice.
Step 2
While pasta is cooking, prepare the dressing by combining all the ingredients in a mason jar. Shake jar until dressing emulsifies and let chill in refrigerator, then chop all ingredients for salad.
Step 3
Strain pasta from water and let cool for a few minutes. Once pasta isn’t steaming, combine pasta, chopped ingredients, cheese, garbanzo beans, and dressing in a large bowl. Then put mixed pasta salad in refrigerator.
Step 4
When the pasta salad is chilled, serve and enjoy! Pair it with 3 Girls Sauvignon Blanc or white wine of your choice.
