
No Anchovy Kale Caesar Salad
If you are still looking for lighter meals after the holiday season, this No Anchovy Kale Caesar is the one for you. Still as flavorful as any other Caesar, this salad is for the people who can’t bring themselves to use anchovies. If kale isn’t your thing either, this would still be amazing on any lettuce of your choosing! If you want more protein, you can also add grilled chicken or salmon. Ingredients
- 1 bunch of kale
- 1 cup of croutons
- 4 slices of bacon – cooked and chopped
- 1/3 cup of parmesan – grated
Dressing
- 1 cup of mayonnaise
- 1/4 cup parmesan – grated
- 1-2 cloves of garlic – minced
- 2 tbsp of lemon juice
- 1 tbsp Worcesterchire sauce
- 1/2 tbsp dijon mustard
- 2 tbsp minced capers
- Fresh black pepper
- Salt to taste
Directions
Step 1
Combine all ingredients in dressing until combined and set aside.
Step 2
Wash kale and dry thoroughly. Cut out stems and tear into bit sized pieces. Massage kale until the leaves are darker and softer, While massaging kale, cook bacon and then set aside on paper towel to absorb grease. Once cooled, chop bacon.
Step 3
In a large bowl, combine kale and crouton and then toss with desired amount of dressing.
Step 4
Sprinkle with 1/3 cup of parmesan and chopped bacon. Enjoy with Maggio Family Vineyards Sauvignon Blanc!
